Ettore Germano ferments the Nebbiolo from 1990 planted vines in temperature controlled stainless steel with indigenous yeasts, followed by 30 40 days of extended maceration. Aging occurs for 24 months in large Slavonian oak casks (2,500 5,000 liters), a traditional approach that builds complexity without heavy oak overlay.
