Cavallotto, Barolo Riserva Vignolo, 2008 Charlie Clay SO061025 Made with a blend ofA mature, single cru Barolo Riserva from one of Piedmont's staunchest traditionalists, now drinking beautifully. Cavallotto has farmed at Castiglione Falletto for five generations, and Vignolo is a small, south west facing parcel of Nebbiolo that yielded just a few thousand bottles in 2008. The winemaking is classic to the core: native yeast fermentation, a month or more of maceration, and years of aging in large Slavonian oak botti before release.
